Avocado Mayo Dip

This recipe for avocado mayo is one of my 5-minute, easy-to-make go-tos. You can use this yummy mayo as a taco topping, a sandwich spread, or a creamy, nutritious dip for veggies.

Ingredients

  • 1 ripe avocado
  • 1 tsp white or cider vinegar
  • 1 tsp lemon juice freshly squeezed
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 2 tbsp olive oil extra virgin
  • 1/2 tsp Dijon mustard

Instructions

  • Wash and dry your avocado.
  • Pit, peel, and slice it in cubes or scoop it with a spoon.
  • Combine it with all other ingredients in a blender and blend until smooth.

Notes

  • Double the recipe to serve 4.
  • Only use ripe avocados as otherwise your mayo will be grainy.
  • For a spicy avocado mayo dip, add a dash of chilli.
  • Feel free to adjust the amount of salt, garlic powder, lemon, and olive oil to your liking. 
  • You can use avocado oil instead of olive oil or combine them.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
