This recipe for avocado mayo is one of my 5-minute, easy-to-make go-tos. You can use this yummy mayo as a taco topping, a sandwich spread, or a creamy, nutritious dip for veggies.

Ingredients
1ripe avocado
1tspwhite or cider vinegar
1tsplemon juicefreshly squeezed
1/2tspgarlic powder
1/4tspsalt
2tbspolive oilextra virgin
1/2tspDijon mustard
Instructions
Wash and dry your avocado.
Pit, peel, and slice it in cubes or scoop it with a spoon.
Combine it with all other ingredients in a blender and blend until smooth.
Notes
Double the recipe to serve 4.
Only use ripe avocados as otherwise your mayo will be grainy.
For a spicy avocado mayo dip, add a dash of chilli.
Feel free to adjust the amount of salt, garlic powder, lemon, and olive oil to your liking.
You can use avocado oil instead of olive oil or combine them.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
